Mark Johnson, a professor of history here on our campus - the University of Tennessee at Chattanooga - is the author of a recently-released book, “American Bacon: The History of a Food Phenomenon,” published by the University of Georgia Press.
He spoke with Ben Greenwell, a student intern for “Scenic Roots” in UTC’s Department of Communication.
